Refactor some Active Record tests

Mostly extracted from: https://github.com/rails/rails/pull/50793

- Use `#adapter_name` instead of `#class::ADAPTER_NAME`
- Avoid monkey patching some connection instances
- Ignore SCHEMA queries in some asssertions
